Super Food Mexican Soup - SO Good!!

My son was feeling a little under the weather today. Needless to say I didn't have too much time to cook dinner. So it was a pressure cooker kind of night and this soup is amazing! It is packed full of antioxidants and other foods that are great for you. The ingredient list is a little long this time, but it's mainly just chopping veggies. This is one you have to try on a rainy or sluggish day. It's definitely a pick-me-up.


2 chicken breasts, cooked and chopped
1 medium onion, minced
4 medium garlic cloves, chopped
3 tbs of red chili powder
3.5 cups of chicken broth
1 yellow pepper, diced
1 cup of chopped spinach
1 can of diced tomatoes
1 can of spicy black beans (WF's are great)
1-1.5 cups of corn
1 small can of diced green chili peppers
1 tsp oregano
1 tsp cumin
1/2 cup of freshly chopped cilantro
salt and pepper

Serve alone or with tortillas and sour cream.
