That's right - chicken tacos made with a crock pot (or pressure cooker).
Amazing in an understatement when referring to how good these taste. My husband couldn't stop eating them, and these are now on the top of his "list" of "best things I've ever made."
So, TRY IT!
2-3 chicken breasts, eventually shredded
1/4 cup of water
1.5 cups of frozen corn
1 can of black beans
1-2 tablespoons of Adobo Sauce (depending on how hot you want them)
1 lime, squeezed (I also threw an additional sliced lime in the pressure cooker. Worked well)
3/4 cup fresh cilantro
1 cup of salsa
1 crushed garlic clove
Red pepper flakes, cumin, chili powder, ground pepper
If using a pressure cooker, put everything in the pressure cooker, cook and shred the chicken, and put it on top.
If using a slow cooker, put the raw chicken in first and put everything else on top. When it's finished, shred the chicken. (cook for 6-8 hours)
I used a pressure cooker tonight.
Top with (if you wish): Additional salsa, avocado, sour cream, or cheese.
