Pasta in a pressure cooker! It CAN be done :). I was going to use Saturday as my leftover day, but I decided I wanted to get creative today.
And thus this amazing pasta was born.
1lb of pasta (I used whatever we had left over)
15 Kalamta olives, sliced
2 large tomatoes, diced
2-3 cloves of garlic, minced
Fresh basil (I also used dried basil)
1/2 small jar of artichokes
1/3 sweet onion, diced
3/4 can of garbanzo beans (my son ate the rest)
3/4 cups of spinach
ground pepper
2 cups of water
^ Mix that all in a crock pot or pressure cooker.
In separate bowl, combine 3 tablespoons of balsamic vinaigrette, 1 tablespoon olive oil, powdered garlic, ground pepper, and a spritz of lemon juice.
When pasta is finished cooking, add the dressing.
Top with feta and some more spinach.
I am not a pasta eater, but this was absolutely incredible.
Everything is bite size and great if sharing for a little one as well. I just had to break the pasta pieces in half for him.
