Ham and Veggie Souffle


Ham, veggie, and light cheese souffle w/spinach and feta salad (this literally took 5-10 min to put together and then it was in the oven) 

4-5 eggs (use egg whites if watching cholesterol) 
1/4 cup milk
1 cup shredded or chopped ham (I don't usually like ham but this is amazing!) 
1/2+ cup of chopped veggies(onions, peppers, celery, etc) 
1 tablespoon brown mustard
A few crumbles of cheese if desired. 

Bake at 350 for 30 min

Salad dressing is just balsamic vinegar, olive oil, salt, pepper, garlic. I never measure. 

Almost zero net carbs (although I'm a huge proponent of incorporating light carbs unless you have a medical issue) and can easily be dairy free.
